A perfect blend of flavors with salmon poached in white wine and mixed into a penne pasta salad.

This is quick meal that tastes like you slaved all day over a hot stove! A creamy tomato sauce with pancetta tossed with your favorite rustic pasta, this dish is hearty and filling.

This sauce was created when I had several leftover ingredients from some PW dishes. It’s very easy and is a family favorite, from my hubby to my toddler.
Oh–and I’m not even sure if this counts as tuscan. To me, tuscan food is flavorful, simple, and includes sausage. This is why I decided to use the title disclaimer “Mock Toscana.”

Spinach, ricotta, mozzarella and parmesan fill the rolled up lasagna noodles, and a bechamel sauce tops the rolls before baking. As a finishing touch, a simple olive oil, onion, diced tomato and fresh basil sauce simmers while the pasta bakes. Delicious!

A friend gave me this recipe. She started using this because she didn’t want to use heavy cream in her sauce. It is delicious!

This pasta is so good. It’s creamy and yummy, and so different from traditional tomato-based pastas.

This is a fairly quick, easy and oh so flavorful meal. It requires minimal ingredients, preparation, and just two pans. The vegetables and sausage are oven-roasted and then they are quickly combined with the cooked penne to form a simple sauce. Oh, and it’s pretty darn healthy, too.

This recipe was invented by ME – a busy mom who couldn’t make her weekly trip to the grocery store and had to use what was on hand. This dish is delicious, full of vegetables and very filling! Best of all, my family didn’t just eat it, they liked it! All my children, from ages 3-10, and their 35-year-old father loved it!
