I think I was in another world when I thought of these cookies, but I decided to merge ingredients into a chocolate chip cookie recipe that would help to bring out more flavor in the chocolate. What I ended up with was brown butter, pears, melted white chocolate, finely chopped almonds and nutmeg.

This recipe yields 60 cookies. These are great chocolate chip cookies without the pretzels, but I love the sweet and salty combination. Instead of cooling my cookies on a rack, I sometimes cool them right on the counter (that I have covered with wax paper). I can cool more cookies that way and they don’t break and fall through the cracks of the rack.

I think the combo of shortening and oil is a little different, since I usually only use real butter for cookies. These turn out really nice. They don’t spread out, they stay chunky and have a shortbread consistency.

This recipe was a labor of love. I tweaked and tweaked this recipe until I felt it was right. I still may tweak it as I go along. The measurements, if followed, will yield a good cookie, but I am of the old school and do not rely on measurements – it’s more of a feeling and a process. It’s about the love.
