I modified a basic waffle recipe, adding cocoa and semi-sweet chocolate chips. Delicious. The waffle was not overly sweet and the addition of the chocolate chips added to the richness of the batter, but did not make them too sweet. You could top these with a variety of toppings depending on what occasion you are making them for.
Mix all the ingredients together except the chocolate chips. Fold the chips into the batter after it has been thoroughly mixed.
Prepare your waffle iron by preheating and spraying with cooking spray if necessary. Ladle the appropriate amount of batter onto the waffle iron and cook according to your specific waffle iron directions.
A twist on a classic quiche, with a new and fun crust!
