Description

What do you do with a Herculean-sized sweet potato? Bake it and make some bread. This is very similar to pumpkin bread, only you simply switch squashes (I love alliteration!).

Ingredients

  • 1 cup Sugar
  • ⅔ cups Orange Juice
  • ⅔ cups Canola Oil
  • 4 whole Eggs
  • 1 cup Applesauce
  • 2 whole Cooked, Mashed Sweet Potatoes
  • 3-⅓ cups Flour
  • 2 teaspoons Baking Soda
  • 1-½ teaspoon Salt
  • 1 teaspoon Cinnamon
  • ¼ teaspoons Nutmeg
  • ½ teaspoons Baking Powder
  • ½ cups Dried Cranberries
  • 1 cup Coarsely Chopped Walnuts

Preparation

Preheat oven to 350 degrees F.

Combine sugar, orange juice, oil, eggs, applesauce and sweet potatoes and mix thoroughly. Add dry ingredients and mix to combine. Add cranberries and nuts and mix well. Divide between 2 greased loaf pans and bake for 50 minutes or pour into muffin tins as an option. Cool in the pan.
