Description

A “fancy” breakfast with quick prep that tricks you into thinkin you’re eating dessert for breakfast. But you’re not.

Ingredients

  • FOR THE FILLING:
  • 5 whole Pears, Cored And Diced (peeling Optional)
  • 1 Tablespoon Lemon Juice
  • 1 Tablespoon Pure Maple Syrup
  • 1 teaspoon Ground Ginger
  • ⅛ teaspoons Ground Cardamom (or Substitute 1/4 Teaspoon Of Cinnamon)
  • FOR THE TOPPING:
  • 4 Tablespoons Melted Butter
  • 1 cup Rolled Old-fashioned Oats (quick Oats Are Also Fine)
  • ¼ cups Sliced Almonds
  • 2 Tablespoons Buckwheat Flour (or Whole Wheat, Almond, Or Coconut Flour)
  • 1 Tablespoon Milled Flax (optional)
  • 1 Tablespoon Raw Sugar

Preparation

Preheat oven to 350 degrees F.

Place the diced pears into a 9×13 inch baking dish. Sprinkle/drizzle remaining ingredients over the top and mix well. Use your hands — it’s fun.

Combine the topping ingredients in a small bowl and mix well. Sprinkle evenly over the pears.

Bake for 25-30 minutes or until the juices that have collected at the bottom of the pan are bubbly.

Serve with Greek yogurt and a drizzle of honey or maple syrup.

Serves 5-6.

Note: You could also make this with chopped apples, peaches, or berries. Just adjust the spices to suit your taste.

This was really easy and was a perfect light brunch item for a ladies group I attend. The tanginess of the yogurt (I used Dannon light vanilla, which is not very sweet), coupled with the slight sweetness of the pears beside the texture of the oatmeal and the nuts was perfect. I will do this again as a side dish to quiche or pancakes. Thanks for sharing!
