Description

Basic ebleskiver recipe that can be made savory or sweet, but you do need to have either an ebleskiver pan or a takoyaki pan.

Ingredients

  • 2 cups All Purpose Or Cake Flour
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 3 whole Large Eggs, Separated
  • 2 cups Buttermilk
  • Filling Of Your Choice
  • Powder Sugar Or Cinnamon Sugar To Coat

Preparation

1. Mix together the flour, salt, and baking soda.

2. Separate the eggs, the yolks from the whites. Set the yolks aside. Beat the egg whites until light and fluffy and soft peaks form.

3. Add the egg yolks and the buttermilk to the flour mixture and stir until combined. Gently fold the egg whites into the batter.

4. Grease your aebleskiver pan with a spray dispenser or with butter (spray your pan again as needed). Heat the pan over medium heat. When hot, fill each cup about two-thirds full with batter.

(Note: At this point you can add filling if you want the filling warm and slightly melted, or if it is something that you can’t put in after the aebleskiver is cooked, like a mini marshmallow or a cheese cube. If adding the filling now, first fill the cup 1/3 full with batter, add a small amount of filling, then cover with an additional 1/3 portion of batter.)

5. Cook for 1 to 1 1/2 minutes before turning. (You can turn your aebleskiver with a toothpick or skewer.) Cook for another minute or until done. Remove to a plate and sprinkle with powdered sugar. Serve warm.

Now fill your yummy puffs! Using a pastry bag, you can fill them with pastry cream, whipped cream, etc.

Variations:

Apple aebleskivers: Sauté peeled apple slices with butter, brown sugar and cinnamon or use canned pie filling. Apples have traditionally been used with aebleskivers.

You can fill them with jam or preserves; you should fill the pan with 1/3 of the way full and then add a teaspoon or so of jam and then cover with additional batter.

Cheese and bacon aebleskivers: Add a cube of cheese and cooked bacon pieces to each aebleskiver.
