Yum! Leftover pumpkin toast makes a tasty breakfast when made into french toast.
To make pumpkin bread;
Sift together flours, sugar, salt, baking soda and spices. Add eggs, applesauce and pumpkin; mix well. Pour into large greased loaf pans. Bake at 350 for 1 hour and 15 minutes.
To make french toast;
Slice pumpkin bread and lay out to get a bit stale. Beat a couple eggs together with vanilla and milk. Soak slices of bread in egg mix for a minute or two and then fry them on your griddle in butter or oil. Serve warm topped off with butter and honey!

What a nice fall twist to traditional french toast! Thanks for the idea! I’m definately going to have to try this soon.
