Description

Craving pancakes AND oatmeal for breakfast? Make both in one!

Ingredients

  • ¾ cups Oat Flour (from 1 Cup Rolled Oats)
  • 1 cup Whole Wheat Flour
  • 2 Tablespoons Sugar
  • 2 teaspoons Baking Powder
  • ¾ teaspoons Salt
  • 3 Tablespoons Butter, Melted, Plus Extra To Cook Pancakes
  • 1 cup 1% Milk
  • 2 whole Eggs, Beaten
  • 1 cup Cooked Oatmeal
  • ¾ Tablespoons Molasses

Preparation

First, make your oat flour. Simply pour 1 cup of rolled oats into a food processor and grind until they become a flour-like substance. 1 cup of oats will make 3/4 cup of oat flour.

Next, combine the dry ingredients (oat flour, whole wheat flour, sugar, baking powder and salt) in a large bowl.

In a medium sized bowl, mix the wet ingredients (butter, milk, eggs, cooked oatmeal and molasses). Note: to cook the oatmeal, mix 1 cup of rolled oats with 2 cups of water and simmer on the stove for about 5-7 minutes.

Finally, fold the wet ingredients into the dry and mix well.

Now all you have to do is cook the pancakes! Heat a pan over medium heat with a little butter to keep the batter from sticking. Pour the batter onto the pan and flip when each side is cooked through. This recipe will make about 15 small pancakes or 6-8 large ones.

I am so glad I tried this recipe! These pancakes taste like my mother’s but they are healthy. I followed this recipe to the letter and I give the author an A++; I learned how to make oat-flour which will save me a lot of money, I found a new “favorite pancake,” I feel satisfied with my cooking abilities, and they were so good that I didn’t need any syrup. Win Win Situation!

Trying to eat more healthy! These pancakes are good, but thicker than I like. But they were very good with fruit on the top, the fruit made the thicker texture alot better! Thanks for the recipe.

We just tried these this morning and they were wonderful! The cooked oatmeal makes them really moist so you dont have to douse them in syrup. They are perfect for our ten month old- there is really nothing unhealthy about them. Even my husband loved them!

I made these for Sunday morning before church. They were easy to mix up and so delicious. I made them just like the recipe only I halved all the ingredients. I served them with fresh strawberries – no need for any other topping. I will be making these again!

Yummy pancakes! I mixed 1 cup of oats with water just above the oat line. I cooked them for 2 minutes in the microwave. I think that this probably made my pancakes thicker than you were intending. I also squirted honey over top of the whole mixture, and added vanilla and some apple spice powder. My husband gave these an 8 out of ten~ Quick to mix up, easy to cook, and healthy. :) I’ll give them a 5 for 5 cause they were sooo good!
