Description

Breakfast the Norwegian way.

Ingredients

  • 2 whole Beaten Eggs
  • ⅛ teaspoons Salt
  • ¼ teaspoons Baking Soda
  • 1 cup Flour
  • 1 cup Milk
  • Optional Garnishes: Powdered Sugar, Fresh Berries, Etc

Preparation

Spray a skillet with cooking spray (Pam or whatever) and preheat on medium/low heat.

Put eggs in large bowl and beat with whisk. Add salt and baking soda and beat well. Add 1/4 cup of flour, then add 1/4 cup of milk – alternating until gone. Stir well.

When pan is hot, ladle in small amounts of batter and flip pancake after 5-10 seconds. Fold the finished pancakes into triangles. Serve with powdered sugar and fresh blueberries or strawberries.

I made these for breakfast and they were a huge hit! I added a half teaspoon of almond extract and sprinkled with powdered sugar. They are so light and fall somewhere between a crepe and pancake heaviness-wise.

My Norwegian husband was in heaven and I’ll likely have to double the recipe next time though as there was just enough batter to feed a family of 4.
