I’m a pancake snob. Cake-like pancakes that absorb the syrup in 2 seconds are NOT my thing. After an extensive search for the perfect pancake recipe, I finally found it! I could eat these every day of my life. Really.
Heat your oven to 200ºF (to keep your cooked pancakes warm). Whisk the flour, sugar, baking powder, baking soda, and salt together in a large bowl. In a medium bowl, whisk the buttermilk, melted butter, and egg together. Make a well in the center of the flour mixture, pour the buttermilk mixture into the well, and gently whisk together until just incorporated with a few lumps remaining (don’t overmix). Heat your skillet over medium heat for about 5 minutes before pouring your batter in. Brush the bottom of the pan with a thin layer of oil. Cook pancakes until golden brown on both sides.

These are the best pancakes! Have made these several times and they are now my go to recipe for pancakes. Hubby said this recipe is a keeper. There are never any leftovers! Thank you for sharing.

Holy Moly those are good panckaes! I’ve never made pancakes that thick before so I was a little skeptical, but they were the bomb!
