Description

My love of oatmeal and pumpkin led to this combination. I teach science and need a quick way to get breakfast in the morning so I make up a crockpot full of this for the week and all I have to do is heat up a bowl in the microwave and I’m good to go. The pumpkin and cinnamon add a great flavor. This is also good for a bunch of hungry little ones (and not so little ones) in the morning!

Ingredients

  • Water (enough That When Combined With The Pumpkin You Have 8 Cups)
  • 1 can (16 Oz.) Pumpkin
  • 2 cups Steel-cut Oats (do Not Use Regular Or Quick Cooking Oats)
  • ½ cups Dried Apricots, Chopped
  • ½ cups Dried Cranberries
  • ¼ teaspoons Salt, Or To Taste
  • Ground Cinnamon, to taste

Preparation

1. Lightly spray the inside of your crockpot with cooking spray.

2. Combine water and canned pumpkin until all the pumpkin is well blended and the total volume measures 8 cups. Pour into the crockpot. I don’t blend the pumpkin and water together in the crockpot as I don’t want to wear off the cooking spray from the sides and bottom of the crockpot.

3. Stir in the oats, apricots, cranberries, and salt. Cover and cook on low for 7 to 8 hours. If needed you can stir the mixture to prevent any crust from forming on top.

4. When done, stir the cooked oatmeal and add ground cinnamon to taste. Stir till it’s incorporated throughout the oatmeal.

5. Serve in bowls, add a little brown sugar if you desire, and some milk.

6. Sometimes I will add vanilla protein powder to the oatmeal after it’s completed cooking. I’ll usually add 4 scoops. This boosts the protein levels and it’ll really hold you all morning!

I offer apologies all around because when I first posted this recipe I really messed up the directions. I’ve since fixed the problem; the water and canned pumpkin should total 8 cups. NOT: 8 1/3 cups water, and not 8 cups of water added to the canned pumpkin. I can only claim temporary insanity. Thank you to those of you who were brave enough to try it with my numerous typos and to those of you who trid it with the first and second fix… ugh!!! This recipe has the correct proportions of water to pumpkin. I’m not sure about the ‘organic’ pumpkin comment. Is organic pumpkin more bitter than say ‘regular’ canned pumpkin? I don’t know; I ususally cook my own pumpkin when I have the time.

I messed up the directions when I first posted this recipe. The pumpkin/water mixture should TOTAL 8 1/3 cups after you combine them, you won’t use 8 1/3 cups water. So I edited it to read correctly. It really is good, I just didn’t write the dircctions correctly. It’s all in my head, that’s probably what what was wrong!! :)

Well I tired it. It wasn’t too bad. There was too much water though but that may have just been an issue with my crock pot. My little girl ate two bowls of it this morning and loved it.

This looks delicious – my husband is a big oatmeal eater, and I love it too (although I’m never really awake enough in the morning to get it underway in time) … this overnight in the crockpot recipe will be just perfect. Plus, the idea of having something that tastes like pumpkin pie (but is really good for you) for breakfast may convert my two kids to being hot cereal eaters! Thanks for the recipe, Kathy Marie!

Very good! I love anything pumpkin and this is so fillilng, not too sweet, I added extra cinnamon it was great!

I make overnight oatmeal with steel cut oats almost weekly in the winter. I thought this with the pumpkin was a fun twist. The pumpkin does have an pronounced flavor so if you aren’t a pumpkin fan then you may not be a fan of this.

I added cinnamon to the whole pot then to my bowl I added almond milk (can’t do dairy), agave nectar, raisins and more cinnamon. The agave is a healthier sweetener than brown sugar so I didn’t feel guilty about adding 1 T. My husbanded did the same and added pecans too.

I really enjoyed this and so did my husband so I’ll probably make it again.

While I liked the idea of this recipe, it just didn’t taste good. The texture was ok, but the pumpkin (I used organic canned) made it very sour. By the time I sweetened it up with brown sugar, milk and cinnamon it just wasn’t healthy anymore. I still have 2 large containers of it left in the fridge that I will probably end up throwing out.
