Description

Warm nutty cinnamon quinoa with dates, apricots, almonds and honey. Great breakfast!

Ingredients

  • 1 teaspoon Cinnamon
  • 1 cup Quinoa
  • 2 cups Milk
  • 1 pinch Sea Salt
  • 2 whole Dates, Pitted
  • 5 whole Unsweetened Dried Apricots
  • ¼ cups Raw Almonds, Slivered
  • 2 Tablespoons Honey
  • 1 teaspoon Vanilla Extract

Preparation

In a medium saucepan over medium heat, toss together cinnamon and quinoa until warmed through. Add milk and bring to a boil. Lower heat to a simmer, add salt, cover and cook 15 minutes.

Chop dates and apricots to a fine dice. Lightly toast almonds until golden and roughly chop.

Once milk is almost fully absorbed into quinoa, add honey, vanilla, dates, apricots and half of the almonds. Mix thoroughly. Top with remaining almonds and serve.

I sent this recipe to my sister, who’s on a restricted diet. She made it for breakfast this morning and LOVED IT! She had no apricots, so she substituted extra dates and candied ginger and used soy milk. She said she ate half the pan before her husband got out of bed. Thanks for sharing this awesome recipe. It is her new favorite breakfast food.
