Description

Crunchy coconut and vanilla granola that tastes just like a macaroon!

Ingredients

  • 2 cups Rolled Oats
  • ¼ cups Ground Flaxseed
  • ¼ cups Wheat Germ
  • 1 cup Shredded Coconut
  • ½ teaspoons Sea Salt
  • ½ cups Chopped Almonds
  • ½ cups Coconut Oil, Liquid
  • ¼ cups Honey
  • ½ teaspoons Coconut Extract
  • ½ teaspoons Vanilla Extract
  • ½ whole Contents Of A Vanilla Bean
  • ¼ cups Coconut Butter, Melted

Preparation

Preheat oven to 375F.

In a large bowl, combine oats, flax, wheat germ, coconut, sea salt and almonds. In a separate bowl, combine coconut oil with honey and extracts. Add oil mixture to oat mixture and stir until moistened. Add scraped vanilla beans and coconut butter, mixing thoroughly.

Lay on a baking sheet and bake for 20 minutes, flipping every 5 minutes, or until golden brown and toasty.

WAY too much oil! When I mixed it all up it seemed inordinately wet. Cooking it at 375, the corners were already starting to burn at the first flipping. By the time it was “done,” it had all burned but is still soft. I recommend cutting the coconut oil and butter both in half.

I love this. It is the best granola I have tasted. I couldn’t find coconut extract so I doubled the vanilla extract. I also couldn’t find coconut butter so I used 1/8 c canola oil and 1/8 c molasses. Thanks for the great recipe!
