These Savory Egg Muffins are filled with veggies and totally delicious. Easy to grab on the way out the door in the morning, they are the perfect mid-week breakfast!
Preheat oven to 400ºF and spray a 12-count muffin pan with Pam. Whisk eggs together and add salt and pepper to taste. Set aside.
Heat oil over medium high heat and saute onions until soft. Add chopped peppers and saute until just tender. Add “sausage” and cook over low heat until just heated through.
Spoon about 1 tablespoon of veggie mix into each muffin cup until mixture is evenly dispersed among all cups. Pour whisked eggs into each cup until each cup is full.
Top with a little bit of cheese in each muffin cup. Bake at 400ºF for 15 minutes. Let cool and enjoy!
