Description

Five simple ingredients, one delicious breakfast!

Ingredients

  • 4 whole Eggs
  • 1 pinch Fresh Ground Pepper, to taste
  • 5 strips Bacon
  • 4 cups Baby Spinach
  • ¼ cups Monterey Jack Cheese, Freshly Grated

Preparation

Crack and beat the eggs, then season with pepper to taste. Next, cook bacon until crispy over medium heat and remove to a plate; crumble when cooled. Reduce heat to medium-low and add the baby spinach to the bacon drippings. Cook down the spinach until it’s soft and wilted. Add crumbled bacon slices to the spinach and top with cheese. Pour eggs over top of the spinach, bacon and cheese (do not stir!). Cover and let cook for 6 minutes or until the center of the eggs are set. Remove to a cutting board, slice and serve!

Do you keep the heat on low or medium-low for that final 6 minutes? Have never done a frittata. Surprising for an Italian girl ; )

Wow, I can’t believe how easy that was! Yummy, too! I halved the recipe without any problems. It was particularly easy because I had some leftover cooked bacon and I *always* have a mason jar of bacon grease in my fridge. Thanks for sharing, that will be one of my new go-to recipes for a quick dinner (or breakfast!)

Made it this morning. Came out great! Quick and easy enough for a workday morning too. Only thing I did different was toss in a few mushrooms.
