An oohey gooey savory egg bake full of broccoli, spinach and cheese.
Preheat oven to 350ºF. Spray a 10-ounce ramekin or oven safe baking dish with cooking spray.
Add broccoli and spinach into prepared baking dish. In a small bowl, add eggs, milk, cheese and seasonings. Stir until combined.
Pour egg mixture over broccoli. Bake for 30 minutes or until center of eggs is firm.
The most delicious way to use up leftover mashed potatoes. (I like to top these with turkey, gravy and cranberry sauce to make the most of my Thanksgiving leftovers!)
