Description

Granolas are getting more popular now and seem to be overtaking muesli in the cereal aisle. The downside is that they are also very expensive especially if you aim for organic/home made type of granola. So I thought, why not to make one myself? It turned up to be super easy, and since you pick the ingredients, you choose the flavour you like. It is easy to store and goes well with yogurt, milk, fruits, and could be vegan.

Ingredients

  • 20 grams Pecans
  • 180 grams Oats
  • 30 grams Flaked Almonds
  • 113.56 liters Pumpkin Seeds
  • 10 grams Flaxseeds
  • 80 grams Maple Syrup
  • 1 Tablespoon Coconut Oil
  • ½ teaspoons Vanilla Extract
  • Pinch Of Salt
  • ½ teaspoons Cinnamon
  • 20 grams Dried Cranberries
  • 75.71 liters Dried Mango

Preparation

Preheat oven to 150ºC or 300ºF.

Roughly chop pecans. I usually chop each pecan half into 4 pieces.

In a large bowl, mix oats, flaked almonds, pumpkin seeds, flaxseeds and chopped pecans. Add maple syrup, coconut oil, vanilla extract, pinch of salt, cinnamon and mix well, making sure all dry ingredients are covered.

Place a sheet of baking paper onto baking tray and spread the mixture evenly. Bake in the oven for 20–25 minutes until lightly golden in colour.

Remove from the oven, add chopped dried mangoes and cranberries. Let cool down completely before breaking it into small pieces. Store in an airtight container to keep it crisp and crunchy.

Note: You can add or replace the seeds, nuts and dried fruits with your favourite ones to same proportion.
