Because I was making this for one person, I adjusted the recipe a bit. I heated the rolls in the oven but then I filled it with freshly cooked bacon, an egg + cheese, spinach, salsa and some fresh parsley. Yummy! I look forward to making this again. It is also a nice portion control method.

This was a great idea, and recipe. I made it for brunch on Easter and my family just loved it.

We thought these were fantastic! I think I have really big eggs because most of the whites ran down the side. (Oops.) Love all of the flavor combinations, though!

I made these with leftover dinner rolls. They were delicious! Thanks for the clever way to use up one of my many leftovers!

Ok I tried these again this weekend after hubs begged me to. I used fresh eggs from the chicken’s instead of the store bought ones and they cooked perfectly this time. They were great we will be keeping this in the Saturday morning rotation. Thanks

So glad everyone likes them! They are one of my favorites. Kay, you could definitely use egg beaters. I used just the egg white and it turned out great. Just be sure to watch the cooking time.

This is SUPER adorable and is such a good idea for brunch, especially if you have people with vastly different food preferences!
