Ingredients

  • 2 cups Old Fashioned Oats
  • 1 cup Sweetened Shredded Coconut
  • ½ cups Chopped Or Slivered Almonds, Or Other Nut/seed Of Choice
  • 3 Tablespoons Ground Flax Seed
  • ¼ cups Brown Sugar Or Sucanat
  • ½ teaspoons Salt
  • ⅓ cups Mashed Ripe Banana
  • ¼ cups Honey Or Brown Rice Syrup
  • 3 Tablespoons Coconut Oil
  • 2 teaspoons Vanilla Extract
  • 1 teaspoon Almond Extract (optional)

Preparation

Preheat oven to 325ºF. Line a baking sheet with parchment paper, or grease with cooking spray In a large bowl, stir together dry ingredients. In a medium sized bowl, mix together the wet ingredients.

Bake for 20-25 minutes, or until light golden, stirring once halfway through baking. Allow to cool. Makes about 5 cups. Store in an airtight container for 1-2 months.
