Description

This is a lovely warm welcome to any morning, especially during the winter. You can also use fresh berries or other kinds of berries, or switch out the oats for other rolled grains.

When my family moved to Idaho when I was seven, the people we stayed with for a few days made this for breakfast our first morning there. I’ve been in love with it ever since.

Ingredients

  • 2 whole Eggs, Beaten
  • ½ cups Honey
  • 1 cup Milk (soy, Rice, Coconut, Cow, Whatever)
  • ½ cups Melted Butter Or Olive Oil
  • 3 cups Rolled Oats
  • ½ teaspoons Salt
  • ½ teaspoons Cinnamon
  • 2 cups Frozen Blueberries, Unthawed

Preparation

Beat the eggs. Stir in honey. Add milk and melted butter or oil.

Add dry ingredients. Stir in blueberries last.

Put into an ungreased 13×9 pan and bake at 350F for 20-30 minutes. It should look nicely browned on top without being burned. Serve warm, with milk.

(I have also substituted applesauce for half the oil. Yum. And I’ve also thrown in coconut. And yes, my husband and I can eat the whole pan, so the 2 servings is for reals.)

This sounds delicious! I can even foresee myself preparing it the night before and popping it in the oven before work. I can’t wait to try it!

I made this for breakfast this morning. It was very good, but the oatmeal didn’t seem to cook enough. It was a little chewy, and I left it in the entire 30 min. Maybe I will try adding a little extra liquid next time. Also, I think it can easily serve more than two. I would say it serves 4, at least!

I made this for breakfast this morning and it was really good! I didn’t have any blueberries, but I did have some frozen peaches, so I just chopped those up instead. Yum!

Simply amazing. Made the house smell wonderful as it cooked! I threw in some almonds to give it some crunch. Great sweet flavor without being overwhelming – happy that it was just honey and not a pound of sugar! Will definitely make regularly.
