Description

Delicious moist bread that will wake you up in the morning and make you smile!

Ingredients

  • 1/2 Cup Butter - Room Temperature
  • 3/4 Cup Sugar (and 3 Tablespoons To Use Separately)
  • 2 Eggs - Room Temperature
  • 1-¼ cup Flour
  • 1-½ teaspoon Baking Powder
  • ¼ teaspoons Salt
  • 1/2 Cup Milk
  • 1 Tangerine (1 Tablespoon Grated Rind And 3 Tablespoons Fresh Squeezed Tangerine Juice)

Preparation

Preheat oven to 350F. Grease and lightly flour a loaf pan.

In a large mixing bowl, cream butter and sugar. Add eggs and beat until fluffy. Add tangerine rind.

In another bowl, mix flour, baking powder and salt. Blend flour mixture into creamed mixture alternately with milk. (Take care not to overmix!)

Pour into prepared pan and bake about 50 minutes. Test until done.

Mix glaze: Add the tangerine juice to 3 tablespoons of sugar and microwave it until the sugar melts. Poke the hot loaf with a skewer or toothpick in several places and pour the glaze/syrup over the entire loaf. Cool in pan for 10 minutes, then remove.

*This can be made with walnuts. Roll them in flour, then add to batter.

I wouldn’t really call this bread, it’s more like a pound cake. But whatever you call it, it’s delicious! Easy to make with a bright, fresh flavor. Got raves at the office. Thanks for sharing!
