Description

Everyone loves strawberry bread. This bread is made even better with the addition of roasted strawberries and browned butter.

Ingredients

  • ¾ cups Strawberries, Hulled And Quartered
  • ¾ cups Brown Sugar Plus 2 Tablespoons, Divided Use
  • 4 Tablespoons Unsalted Butter
  • 1-¾ cup All-purpose Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Cardamom
  • ½ teaspoons Salt
  • 2 whole Eggs
  • ½ cups Plain Yogurt
  • 2 teaspoons Vanilla Extract

Preparation

Preheat oven to 350 F.

Grease a rimmed cookie sheet with oil. Place strawberries on the cookie sheet and sprinkle with 2 tablespoons of the brown sugar and toss with your hands to coat. Roast for 20 minutes. Remove pan from the oven and let the berries cool to room temperature.

Brown the butter in a medium saucepan over high heat. Watch as the butter gets bubbly and then the bubbling subsides. Once it subsides, you should see brown specs at the bottom of the pan. Remove from heat and let it cool.

Whisk together flour, remaining brown sugar, baking soda, cardamom, and salt in a large bowl. In another bowl, whisk together eggs, yogurt, browned butter, and vanilla extract. Add this wet mixture to the dry ingredients and stir with a spatula until combined. Add roasted strawberries and and mix to combine.

Grease a standard sized loaf pan with non-stick spray and pour in the batter. Bake for 40 to 50 minutes or until a toothpick or knife inserted in the center comes out clean.
