Description

These naturally gluten free muffins are completely flourless and packed with protein! A guilt free breakfast, ready in just 15 minutes!

Ingredients

  • 2 whole Large Ripe Bananas
  • 1 cup Creamy Peanut Butter
  • 4 Tablespoons Protein Powder
  • 1 Tablespoon Vanilla Extract
  • 1 teaspoon Baking Powder
  • ½ teaspoons Salt
  • 2 whole Eggs
  • ¼ cups Honey
  • ½ cups Mini Chocolate Chips

Preparation

Preheat oven to 400ºF.

Place all ingredients except the chocolate chips in a blender. Blend mixture approximately 30-45 seconds or until completely smooth. Using a spatula or spoon, lightly stir in the chocolate chips

Spray a standard muffin tin with cooking spray and scoop batter into muffin tin (I use an ice cream scoop). Bake 12-14 minutes or until muffins have set.

laurenindie- I haven’t made this with anything other than the bananas, but I would imagine 3/4 cup of apple sauce might do the trick. I think apple and peanut butter would be a great flavor combo! I will try and let you know!
