Description

Moist banana muffins filled with the chocolatey goodness of Nutella.

Ingredients

  • 3 whole Ripe Bananas
  • 6 Tablespoons Vegetable Oil
  • ⅓ cups Sugar
  • ½ teaspoons Salt
  • 1 whole Egg
  • 1 teaspoon Vanilla
  • 1 cup All-purpose Flour
  • ½ cups Whole Wheat Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 6 Tablespoons Nutella

Preparation

Mash bananas in a medium bowl. Add oil, sugar and salt; beat until well mixed. Add egg and vanilla; beat again until mixture is smooth.

In another bowl, combine flours, baking soda and baking powder. Sift over the banana mixture. Stir in by hand using a rubber spatula just until moist.

Lightly grease a 12-cup muffin tin and pour a spoonful of batter into each cup. Drop a 1/2 tablespoon of Nutella into the centre of each cup. Top them with remaining batter to completely cover the Nutella.

Bake at 350ºF for 18 minutes or until tops are golden brown.

At first I was worried since there didn’t seem to be enough batter but it turned out pretty well. I only baked it for 15 minutes but I think if I baked it in lesser time it could be moister.
