Eggnog Muffins with Eggnog Icing

Description

These holiday-inspired muffins are amazing and simple, perfect as a muffin or cupcake. If you are short on time like most, impress your family, friends or co-workers with these golden gems. Easy as 1-2-3, fast, fancy and flavorsome.

Ingredients

  • 2 cups Eggnog, Not Lite Or Lowfat
  • 1-½ cup Flour, Unbromated And Unbleached
  • 2-¼ teaspoons Aluminum Free Baking Powder
  • ¾ teaspoons Celtic Sea Salt
  • _____
  • FOR THE ICING:
  • ¼ cups Powdered Sugar
  • 1 Tablespoon Eggnog
  • 1 dash Fresh Ground Nutmeg For Sprinkling

Preparation

1. In a medium bowl measure out the eggnog and briefly set aside.
2. In a small mixing bowl whisk the flour, baking powder and salt.
3. Add the flour mixture to the bowl of eggnog and whisk until well-blended, about 50 turns (yes I counted!).
4. Scoop 2 cookie scoops into each regular-sized muffin liner or greased muffin tin.
5. Bake in a 350-degree F oven for 13-16 minutes or until an inserted toothpick comes out clean. Let cool 10 minutes.
6. For the icing, mix the powdered sugar and eggnog.
7. Drizzle the muffins with eggnog icing and a sprinkling of fresh nutmeg over the slightly cooled muffins. (Note: Go easy on the nutmeg if you’re not used to using it; it is strong. A little goes a long way.)

To Megan whose batch did not turn out. The only time I had one not turn out was when I tried to use left over EggNog that was fat free. It does not contain the yolk and usually not the egg white either, along with no butter. This way it does not hold together and does not set. I hope everyone will try this following the recipe. It is noted on the recipe to not use reduced or fat free nog. It works if you follow it! Thanks Megan, I hope you will try again sometime!

I’m sorry, Natasha, these didn’t work for me either. I used full-fat eggnog and followed the recipe exactly. But I did have to bake them for 22 minutes and they were light, golden brown …. but sunken in the middle and still gummy inside. After cooling completely, the texture was almost like a bread pudding. The batter was runny, so I thought maybe the recipe should have called for more flour. ??

These did not work for me at all, They did not set. I cooked them for 4 times longer than the directions called for but they were still really wet. They looked amazing but just missed that mark, Sorry.
