Description

A muffin that tastes just like a cinnamon roll, but without all the work!

Ingredients

  • FOR THE DOUGH:
  • ½ cups Brown Sugar
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • ½ teaspoons Vanilla
  • 1 whole Egg
  • 1 cup Buttermilk
  • 3 cups Flour
  • FOR THE FILLING:
  • 2 Tablespoons Butter, At Room Temperature
  • ⅔ cups Brown Sugar
  • 1 teaspoon Cinnamon
  • FOR THE ICING:
  • 2-½ Tablespoons Milk
  • ¼ teaspoons Vanilla
  • 1 cup Powdered Sugar

Preparation

In a bowl combine brown sugar, baking soda, salt, vanilla and egg. Add in the buttermilk. Mix together with a fork. Add the flour. Stir until it is well combined. Be careful not to over mix!

Turn the dough onto a floured surface, and knead for about a minute. Roll the dough into a 12×24 inch rectangle.

For the filling, spread the butter over the dough. Sprinkle with the brown sugar and cinnamon.

Roll the dough into a log and stretch it slightly. Cut into 2-inch pieces. Put them into a greased muffin tin. Bake for 15 minutes at 375ºF.

While they are baking, you can put together the icing. Add the milk and vanilla slowly to the sugar. Drizzle over the muffins!

Great alternative to timely cinnamon rolls. Mine turned out a little chewy. I may have kneeded the dough too long. I will definitely try these again!
