Description

I’ve finally perfected my banana muffins! I am very picky about muffins so please don’t think this is just another boring, run-of-the-mill banana muffin. Not only do these taste amazing, but they also use my secret baking ingredient, buttermilk. Enjoy!

Ingredients

  • 1 cup White Sugar
  • 2 whole Eggs
  • 1 Tablespoon Vanilla
  • 4 whole Bananas, Mashed
  • ¾ cups Buttermilk
  • 1 cup Margarine, Melted
  • 3 cups Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 2 Tablespoons Cinnamon
  • 1 cup Coconut Sweetened, Shredded
  • 1 cup Chocolate Chips

Preparation

- Cream together sugar & wet ingredients (eggs through margarine on the above list).
– Mix in dry ingredients.
– Fold in coconut and chocolate chips.
– Place 2 scoops/spoons of batter into lined muffin tins.
– Bake at 350° for about 20 minutes.
– Makes 24 muffins

Note: You can use regular milk instead of buttermilk.

Yum! Made these today. 12 muffins for the two of us and I used the rest of the batter in an 8×5 loaf pan lined with parchment for easy freezing. One hour cook time in a glass pan was perfect!

Ok, every one you have to try these. I don’t care how you modify the recipe to fit your needs, these are just killer muffins. Trust me your friends and family will be fighting over these. Yummy is an understatement. Thanks Alison for sharing this with us.

Great Recipe!

I made a few healthful adjustments:

I used 2/3 cup of agave nectar, instead of sugar.
I used 3 cups of whole wheat pastry flour.
I used 1 cup of unsweetened, natural coconut flakes.
I used 2/3 cup of mini semisweet chocolate chips.

From all the reviews/comments, my version tastes the same and has a lower glycemic level (aka lesss/better sugar and carb content). Yippee!

I made these tonight and have already eaten 3. I don’t think they will make it through tomorrow in the house. I made them a little chocolatier by adding 2 tbsp of cocoa and omitted the coconut simply because I didn’t have it in the house. All around easy and delicious! Thank you for sharing the recipe!

Soooooo good! Dense yet light at the same time. They bake up perfect! I used peanut butter chips and left out the coconut (cause my husband doesn’t like it, I know, crazy!) and they were fantastic! I can’t wait to try different combos with nuts and chips! Thank you!

my hubby and son went wild over these! very tasty! i did use honey instead of the sugar to make them a tad healthier.

Delicious muffins, great flavor.
My only dislike is that they are a bit too dry. I was expecting a very moist muffin and was slightly disappointed.
