Description

A moist and delicious chocolate chip muffin.

Ingredients

  • 1-½ cup Flour
  • ¾ cups Sugar
  • ½ teaspoons Salt
  • 2 teaspoons Baking Powder
  • 1 cup Chocolate Chips
  • ⅓ cups Canola Oil
  • 1 whole Egg
  • ⅓ cups Milk

Preparation

Preheat oven to 375ºF. Grease 12 muffin cups or line with muffin liners.

Combine flour, sugar, salt and baking powder. Stir in chocolate chips.

Place vegetable oil into a 1-cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture.

Fill muffin cups about 2/3 full. Sprinkle with additional chocolate chips if desired. Bake for 14 to 16 minutes.

My girls liked these muffins, however the took quite a bit longer to finish baking, I live near 4,000 feet elevation so that could be why. After cooling they had a harder top than we are used to. I may try it as mini muffins in the future.

I was surprised at how thick the batter was, but these are great! I used mini chocolate chips and made them as a breakfast treat for my friends birthday. She loved them. Thanks for sharing.
