Preheat oven to 350.
Mix dry ingredients (except cherries and almonds).
In another bowl, mix wet ingredients.
Add wet to the dry. Fold in cherries and almonds.
Place dough on lightly floured surface & knead 10 times. Split dough into two equal loaves & shape each into an oblong loaf.
Place loaves on a greased baking sheet. Bake for 25 minutes. Remove from oven and allow to cool for at least 10 minutes.
Carefully cut each loaf into 18-20 slightly separated pieces.
Reduce oven temperature to 250 and bake another 20-25 minutes til almost completely firm. Remove and cool completely.
Fresh sweet onions, sharp cheddar, crisp, sweet, nutty corn bead all in one muffin. Perfect as a side to fish or steak, with a picnic or in the morning. Add a grind of black pepper before baking for an extra kick.
