Description

The best tasting biscuit I’ve ever had … and I’m from the South!

Ingredients

  • 1-¾ cup Unbleached Bread Flour
  • ¼ cups Cornstarch
  • ¾ teaspoons Salt
  • 1 Tablespoon Baking Powder
  • 2 teaspoons Sugar
  • 1-¼ cup Heavy Cream
  • 2 Tablespoons Butter, Melted (optional)

Preparation

Whisk together the flour, cornstarch, salt, baking powder and sugar. Stir in heavy cream until a dough forms. Do not overwork. Turn the dough out onto a lightly floured work surface and gently pat it into an 8″ circle about 3/4″ thick. Use a sharp 2 1/4″ biscuit cutter to cut rounds. Place them on a lightly greased (or parchment-lined) baking sheet.

Brush the biscuits with melted butter if desired.

Place the pan of biscuits in the freezer for 30 minutes. Preheat the oven to 425ºF while the biscuits are chillin’. Bake for 20 minutes until they’re golden brown. Remove from the oven and serve immediately (uhhh, not a problem).

Just wanted to say I’ve used nothing but this biscuit recipe since I discovered it. Last night, I made homemade chicken pot pie. Instead of pie crust, I topped it with a sheet of this biscuit dough, rolled much thinner than I would have for biscuits. It was so good!

These biscuits are really, really good. I’ve used several recipes for biscuits, mostly that use butter, and I like this one far better. It’s easy, quick, and the result was a very light, very tender biscuit. This is a keeper!

These are very nice and I love how easy the recipe is. They do bake up very tall and fluffy! They do seem to be best as soon as they are baked (as the recipe states) and didn’t store as well as a butter biscuit. A great, fast biscuit to accompany stew or soup!
