Description

These biscuits are light and fluffy and super easy to make! Perfect side to a meal with a little bit of butter, or even better to use in a biscuits-and-gravy recipe.

Ingredients

  • 4 cups All-purpose Flour
  • ¼ cups Granulated Sugar
  • 8 teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • 1-½ teaspoon Salt, Or To Taste
  • 8 Tablespoons Cold Butter
  • 2 cups Chilled Buttermilk

Preparation

1. Preheat your oven to 450 degrees F.
2. Combine dry ingredients in a large, shallow bowl.
3. Slice cold butter into thin pats. DO NOT soften your butter! Place the cold butter chunks in the bowl and “cut into” the flour mixture until it looks crumbly. Basically, you want to chop the butter into tiny pieces, no bigger than peas. You can do this using a pastry cutter if you have one, but knives, a cookie cutter, or an apple slicer would work as well.
4. Make a well in the center of the mixture and pour in the buttermilk.
5. Stir with a wooden spoon until just combined.
6. Roll out onto a well-floured surface and cut into 2″ rounds, OR scoop and shape 2″ rounds with your hands and place on an ungreased baking sheet.
6. Bake about 20 minutes or until they start to brown.
7. Enjoy!

Thanks everyone! I was also “biscuit challenged” so I’m glad to help out :)

@daylehogue The measurements seem a little strange because I was completely making things up as I went along with this recipe! I finally had a successful experiment and stuck with it. You could certainly try changing things, let us know how they turn out :)

These were super easy! My first successful biscuit making session. I have been biscuit and pancake making challenged until now! Thanks!

I was looking for something quick & easy to make biscuits & gravy for dinner tonight (one of my husband’s favorites!) and stumbled upon this recipe. Was also excited to use up some of the buttermilk in the fridge. As I was measuring & mixing I thought 8 tsp of baking soda sounded like alot. That’s almost 3 Tablespoons! But I went with it because I’m no expert & thought if I used less I may mess up any ratio between baking soda & baking powder & have hard flat biscuits. They came out of the oven nice & tall. A little heavy & definitely bitter, which I think was too much baking soda. Wondering if 8 tsp was a typo…? Would think you could reduce the amount down closer to 1 Tablespoon??

Jamie,
For years I’ve struggled with making biscuits and have always failed. Everytime I would tell my husband that I’m going to make biscuits his eyes glaze over and beads of sweat form on his forhead. My friends and co-workers know my dirty littel secret, but after making your biscuits this past Saturday I’ve been redeemed, vindicated and triuphant! Thank you so much for a receipe that even a biscuit challenged cook can do!

Jamie,

Thank you! I was looking for an ‘easy’ recipe to make my own biscuits with. When I tend to make something the 1st time, I usually have to call 1 of my other cook friends a gazillion times. Not with this recipe. It was very easy, my biscuits turned out very yummy & they were ‘not processed’! I am so happy I found this recipe.

Good stuff, I’ve never been able to make a good biscuit but these are pretty tasty if I do say so myself! Thanks for sharing!

Ok, I have had a biscuit or two in my life…they have all been generally tasty and puffy and flaky. But these where amazing..like I could not believe it. It totally 10pm and I made them and I am standing over my sink and I can not stop eating them. I rolled my dough to 2 inches thick and used a 2inch (I think) biscuit cutter, so they are huge and beautiful and oh my. Thank-you for creating these!

I substituted heavy cream for the buttermilk because I didn’t have any – these were really great with chocolate gravy. =)
