Description

A perfect mini muffin for tailgating or a quick morning breakfast as you are running out the door. Warm or cold, these muffins hit the spot and the bacon lovers in your house will adore them!

Ingredients

  • ⅔ cups Bacon Cooked And Crumbled (about 6 Slices)
  • 2 cups Baking Mix, Such As Bisquick
  • ⅔ cups Milk
  • ¼ cups Vegetable Oil
  • 1 whole Egg
  • 1 cup Shredded Cheddar Cheese

Preparation

Heat oven to 400ºF. Spray a mini muffin pan with cooking spray.

Cook bacon and set aside to cool before crumbling. Mix the baking mix, milk, oil, and egg. Fold in the cheese and bacon.

Spoon batter into the mini muffin pan and bake for 12 minutes.

Makes 24. Store in an airtight container in the fridge.
