Description

A very special banana bread recipe inspired by my favorite Halloween candy.

Ingredients

  • 2 cups Flour
  • ¾ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1 cup Sugar
  • ¼ cups Butter
  • 2 whole Eggs
  • 1-½ cup Mashed Ripe Banana
  • ⅓ cups Plain Yogurt
  • 1 teaspoon Vanilla Extract
  • ½ cups Milk Chocolate, Roughly Chopped
  • ½ cups Shredded Sweetened Coconut
  • ¾ cups Slivered Almonds

Preparation

Preheat oven to 350°F.

Combine the flour, baking soda, and salt, stirring with a whisk.

Cream together sugar and butter in a large bowl. Add the eggs 1 at a time and beat until combined. Add banana, yogurt, and vanilla; beat until blended.

Add flour mixture, beating on low until combined. Fold in chocolate, coconut and almonds.

Pour batter into a 9 x 3 inch loaf pan coated with cooking spray. Bake for 1 hour. Cool 10 minutes in the pan on a cooling rack. Remove from the pan and let cool.

Yummers! I baked this up last night. I decided to bake them as mini-muffins instead of a loaf, so baked them at the same temp for about 15 minutes each pan. Thank you for sharing the recipe, I predict I will be using this recipe in the future time and time again. Thank you!
