Description

I had to make a chocolate cake for a birthday party, so I combined 3 different recipes and came up with this: a moist chocolate cake with a hint of cinnamon, layered with chocolate cream cheese icing and covered in dark chocolate ganache. It was a screaming hit and even though I don’t even like cake, I craved it for days afterward.

Ingredients

  • FOR THE CAKE:
  • 2 cups Sugar
  • 2 cups Flour
  • 1 teaspoon Cinnamon
  • 4 Tablespoons Cocoa
  • 1 cup Water
  • 2 sticks Margarine Or Butter
  • ½ cups Buttermilk
  • 2 whole Eggs, Beaten
  • 1 teaspoon Baking Soda
  • 1 teaspoon Vanilla
  • _____
  • FROSTING/FILLING INGREDIENTS:
  • 1 box Powdered Sugar (16 Oz.)
  • 2 blocks Softened Cream Cheese (3 Oz Each)
  • 4 Tablespoons Softened Butter
  • 3 Tablespoons Cocoa
  • ½ pints Heavy Whipping Cream
  • 1 teaspoon Vanilla

  • GANACHE INGREDIENTS:
  • 2 cups Heavy Whipping Cream
  • 2 Tablespoons Butter
  • 2 packages Semi Sweet Chocolate Chips (12 Oz Each)

Preparation

For the cake (I doubled this recipe to get four 9-inch round layers):

Preheat oven to 400F. Sift together 2 cups sugar, 2 cups flour, and 1 teaspoon cinnamon. In a saucepan, mix 4 tablespoons cocoa and 1 cup water. Add 2 sticks margarine or butter and bring to a boil. Pour this into the flour mixture and blend well. (Do not use an electric mixer; blend by hand.)

Mix together 1/2 cup buttermilk, 2 beaten eggs, 1 teaspoon baking soda, and 1 teaspoon vanilla. Add to the batter and blend well. Pour into greased and floured pans. Bake at 400F for 20 minutes or until cake tests done. Completely cool cake on wire racks before frosting.

For the chocolate cream cheese frosting for between the layers:

Combine powdered sugar, cream cheese, butter, and cocoa. Add vanilla. Add heavy whipping cream a few tablespoons at a time while mixing until desired consistency. Use to assemble the cake, frosting between each layer, for a total of 3 layers of frosting.

For the dark chocolate ganache for the top and sides of the cake:

In a saucepan, mix and bring to a simmer the whipping cream and butter. Add the chocolate chips and stir until smooth. Let sit until completely cool. (I actually let it cool completely and then put it in the refrigerator for a bit, just to make sure it has a pretty thick consistency.) Frost the top and sides of the cake, licking the bowl often!

Mine definately did not look this good, but it tasted GREAT! I did not double the cake recipe, but followed the rest. I ended up with twice as much ganach and frosting as I needed. So if you are making just two tiers instead of four, cut the frosting and ganach in half! I left out the cinnamon also. YUMMY!!!

I made this cake for a Special Occasion and it was a huge hit. I loved all the chocoloate! To decorate for Christmas I crushed candycanes and sprinkled them on the cake. It was delish!! Thanks for a great recipe!
