Description

Minty crunchy granola snack!

Ingredients

  • 4 Tablespoons Butter
  • ½ cups Brown Sugar
  • ¼ cups Honey
  • 2 cups Quick Oats
  • 1 cup Rice Chex Cereal, Crushed
  • 10  Cool Mint Oreo, Crushed
  • ¾ cups White Chocolate Chips
  • 6  Cool Mint Oreo, Roughly Chopped

Preparation

1. In a saucepan over medium heat melt butter, sugar and honey.

2. Bring to a boil and stir until all of the sugar has dissolved.

3. Take pan off heat.

4. In large bowl and add oats, Chex Mix and 10 crushed Oreos. Mix to combine then pour butter mixture over it and stir.

5. Spread out the mixture in a 9×13 baking dish and let it rest for 15 minutes in refrigerator.

6. In the meantime, melt the white chocolate chips (you can just heat them for 30 seconds at a time in the microwave, stirring between each additional 30 second increment and stopping once it’s almost smooth).

7. Pull baking dish out of the refrigerator and score it down the middle.

8. I make one half of the bars plain and one half with the following topping. If you want to put topping on the entire thing, see note below. On one half of the granola bar, spread out the white chocolate to make an even coating on top.

9. Sprinkle the chocolate with 6 roughly chopped Oreos and press them down into the white chocolate.

10. Rest another 15 minutes in the refrigerator until hardened.

11. Cut into bars and enjoy!

Note: To make the entire pan with a topping, melt 1 1/2 cups white chocolate and roughly chop 12 Cool Mint Oreos. This will make about 16 bars.
