Description

These will change your mind about sweet potatoes forever.

Ingredients

  • 2 pounds Sweet Potatoes
  • 4 strips Bacon
  • 1 whole Onion, Chopped
  • 2-½ Tablespoons All-purpose Flour
  • ½ teaspoons Salt
  • ¼ teaspoons Black Pepper
  • 2 cups Reduced-fat Milk
  • 1-¼ cup Grated Parmesan Cheese

Preparation

Potluck tip: if prepared in advance, bake as directed, cover and refrigerate for up to one day. Reheat at 325 degrees for 15 minutes covered, then remove cover and continue heating until warm.

1. Preheat oven to 325 degrees. Peel potatoes; cut into 1/4 inch slices. Place potatoes in a large pot of boiling water. Cook for 5-10 minutes or until just tender. Drain well and set aside.
2. Meanwhile, fry bacon in a large skillet over medium-high heat until crisp. Drain on a paper towel, crumble and set aside.
3. Add chopped onion to bacon drippings and cook until tender. Stir in flour over low heat and cook to a paste. Add salt and pepper. Add milk and cook until mixture thickens slightly.
4. Arrange half of the sweet potatoes in the bottom of an 11×7 inch baking dish. Sprinkle on half of the crumbled bacon. Pour on half of the milk mixture. Arrange remaining potatoes, sprinkle with remaining bacon and pour the rest of the milk mixture over the top. Sprinkle with cheese. Bake for 20 minutes or until potatoes are tender. If desired, brown cheese for 1-2 minutes under the broiler.

Made these for one of my side dishes today. I loved it and so did everyone else. I wanted something different than mashed sweet potatoes. I thought and so did my guest that this was a great change from the ordinary sweet potato. Thanks for a great recipe.

I must have done something wrong, or else my sweet potatoes were really flavorless to start with, because this didn’t have any sweet potato flavor at all. I think I used too much onion, too. I’m never sure how much “one whole onion” is supposed to be.

It sounds like it should be great, and other people have really liked it so I’m going to try it again with different sweet potatoes.

I made this last weekend for a big family dinner… YUM! I think this may very well be my new favorite side dish.

unfortunately, my family is more of a pour-10-gallons-of-sugar-on-it-then-we’ll-eat-it type of family. *sigh*

Well, I can small batches just for me. *grin*

I’m not a big fan of over-sweet sweet potato recipes. I almost like them best just baked with butter – but this looks really good. And easily adaptable for gluten-free folks by just leaving out the flour. (It’s how I make “regular” scalloped potatoes.)

My favorite “fancy” sweet potato recipe just glazes them with honey and lime juice mixed together. Deelish.

I DREAD the holidays with its baked marshmallows on top of sweet potato casserole … just too sweet for me. I like the option to do a streusel topping with pecans and oatmeal and butter and brown sugar. But again, really sweet.

This sounds like a great addition to our Thanksgiving table this year!

This was awesome. We had several pounds of holiday (glazed) ham leftover and needed something to do with it. This recipe was the perfect solution with a couple of simple mods…I added 1 lb. diced holiday ham to the recipe (layered after the potato layers), increased the milk/cream to 3 cups, and topped with shredded Gouda cheese rather than Parm. I also threw in 1 tsp of dried thyme and 1 tsp of dried basil while making the sauce. Rave reviews, and a perfect savory complement to the sweet/salty ham. It was a great well-rounded casserole.

Really tasty. Loved the combo of bacon, parm and sweet potatoes. Next time I’ll add the parm to the white sause instead of just putting it on the top.

I made this for Thanksgiving this week and LOVED it!! I sprayed the glass 11×7 dish a bit first – I was nervous it would stick… :)

THEN – I made it with 2 cups of HALF & HALF – simply scrumptious!!! I layered a bit of the cheese in the first layer, too… I couldn’t help myself!

It was just awesome – THANK YOU so much for this recipe! It was even better the next day… :)
