Description

Refreshing, creamy, tart and sweet … this is sunshine in a bowl!

Ingredients

  • ½ cups Meyer Lemon Juice
  • 2 whole Large Eggs
  • ¾ cups Granulated Sugar
  • 2 Tablespoons Butter
  • 2 cups Half-and-half
  • 1 pint Strawberries
  • 1 Tablespoon Granulated Sugar

Preparation

Note: if you are using regular lemons, add an additional 1/4 cup of sugar, making it a total of 1 cup of sugar for the custard base.

Combine the eggs, sugar, lemon juice and butter in the top of a double boiler. Place over simmering water and beat with a hand mixer (unless you are in for a whisking workout) for about 15 minutes or until the mixture thickens. You are basically going for lemon curd here.

Let the curd cool a bit and then add in your half-and-half. Cover this with plastic wrap and refrigerate overnight or until thoroughly cold.

Thinly slice 1 pint of strawberries (tops removed) and toss with 1 tablespoon of sugar. Let the strawberries sit for at least 2 hours.

When your custard, your strawberries and your ice cream machine are ready, pour the strawberries and their liquid into the custard base and mix well. Freeze according to your machine instructions.

It will come out frozen but soft. If you like your ice cream firmer, then put it in the freezer for a few hours.

Serve as-is or garnish with a lemon slice.

I made this ice cream last night, and it was wonderful! The lemon isn’t sharp like lemon ice, it’s more like lemon meringue pie. I tweaked it just a tiny bit by adding the zest of one Meyer lemon and half a dozen chopped strawberries to the first step. A sample of the lemon mixture before adding the half and half made me want to just eat it up with a spoon right there! I restrained myself and completed the recipe. I used a whisk rather than a mixer because I needed the workout – it wasn’t too bad. Kind of zen.

Because you add cold half and half to the lemon mixture, it cools down much more quickly than most ice cream mixes. I was able to put it in my ice cream maker after just two hours.

Speaking of lemon meringue pie, after this recipe, I’m thinking of mixing strawberries into the next pie I make. The flavor combination is awesome!
