Cool, limey, minty and oh so refreshing! (Cook time is freezer time!)
In a pot, add sugar, water and 3/4 bunch of mint leaves. Gently boil until sugar dissolves, about 4 minutes. Leave to steep another 5 minutes; strain and cool.
Peel, seed and rough chop cucumber. Place in blender with a little water and puree; strain through fine mesh sieve lined with cheesecloth.
Combine with cooled simple syrup, lime juice and guar gum. Process in ice cream machine.
Freeze overnight. ENJOY!
