I spray the muffins with a butter flavored pan spray before shaking in cinnamon sugar mixture. Also freeze well.

These are fantastic. I added a little vanilla to the batter just because I love vanilla. Think I’m gonna try adding choped pecans next time just to play with it a little, but the original recipe is soooooo good it really doesn’t need anything :-) !

I am not a baker and love it when I can find easy quick breads to make. Just made this with my daughter and they are truly tasty. Next time I will try them in a mini-muffin pan.

These are delicious. The only kind of oil I hand on hand at the time was a lemon evoo. I used it very apprehensively, and was very pleasantly surprised. Next time I am going to use a butter oil mix. I also grated fresh nutmeg cause it was also all that I had on hand. They really remind me of cider mill doughnuts. Thanks!

Very good…made 22 mini muffins, but FYI I doubled the cinnamon sugar topping and used most of it and I should have doubled or more the melted butter(I started with about 1/3 cup) as I ran out and had to make more! Kids loved them and thought they should be called snickerdoodle muffins.

These were great- tasty, not too sweet, nice texture. Super easy and quick, too. The one thing I’d change is to call them “Snickerdoodle Muffins.” Thanks for sharing!
