Description

Who said healthy can’t taste amazing? This delicious, low carb, sheet pan dinner pairs the mouth watering flavors of maple and bacon with the nutrient-packed combo of salmon and roasted greens.

Ingredients

  • ½ heads Green Cabbage
  • 1 Tablespoon Olive Oil
  • 4 slices Bacon
  • 16 ounces, weight Salmon
  • 2 Tablespoons Sugar Free Maple Syrup
  • Salt And Pepper

Preparation

Preheat oven to 450ºF.

Cut cabbage into equal wedges (one wedge for each serving). Place each wedge of cabbage in each corner of a sheet pan, drizzle each wedge very lightly with olive oil and a sprinkle of salt and pepper.

Cut each piece of bacon in half, and drape each cabbage wedge with 2 halves of bacon. Roast cabbage in oven for 15–20 minutes until outer leaves begin to crisp.

After 15–20 minutes, carefully remove sheet pan from oven. Flip each cabbage wedge over to its other side, replacing the bacon back on top of each wedge. Place salmon fillet(s) in the middle of the sheet pan, brush maple syrup over the salmon, sprinkle with salt and pepper, and return everything to the oven.

Bake for another 10–15 minutes until salmon is cooked through.
