Description

You can still enjoy oven fried chicken and live a low carb lifestyle! I hope that you try this recipe and love it as much as I do.

Ingredients

  • ¾ cups Pork Rind Crumbs
  • ¾ cups Parmesan Cheese (use The Canned Stuff)
  • ½ teaspoons Granulated Garlic Powder
  • 1 teaspoon Italian Herbs, Or Other Herbs Of Choice
  • 4 whole Chicken Breasts, Cut In Half
  • 2 whole Eggs, Scrambled Together

Preparation

Preheat oven to 400ºF.

Using a fork, mix dry ingredients together. Dip chicken pieces in egg, then coat with the crumb mixture, being sure to cover completely. Place on a baking sheet and continue until all pieces of chicken are done. Bake for 20–25 minutes, until the juices run clear and chicken is white throughout.

Serve with some salad or green beans almondine. Enjoy!

I do a similar recipe. Carolin, I just buy pork rinds and smash them with either a rolling pin or run them through my food processor (depending on whether I’m feeling lazy or not). Both options work great.

I also use this “breading” on pork chops. Yum!
