This is something I threw together one morning and now it’s become a weekend morning tradition in my home. It’s easily adaptable so feel free to customize it to your heart’s desire.
1. Cook the turkey bacon in a skillet over medium heat. Once it’s crisply, remove it from the skillet onto a plate. Once it’s cooled a bit, crumble it.
2. Separate the eggs whites and put them in a bowl with the two whole eggs.
3. Add the cheese, bacon, salt and pepper into the eggs and mix to combine.
4. Spray a pan with cooking spray and heat at medium-high heat.
5. When the pan is hot, add the onions and saute until translucent and slightly golden.
6. Whisk the egg mixture with a fork then pour over the onions.
7. Scramble until the eggs reach your desired consistency.
8. Serve and enjoy!
Note: An egg substitute (such as Egg Beaters) can be used in place of the whole eggs and egg whites.
Optional Ingredients: mushrooms, green peppers, artichoke hearts, turkey sausage, jalapenos, etc.
