Description

Super Spud Potato Bake is a take on the original Pizza Express beauty. This buttery, cheesy delight is easy to make and oh so delicious!

Ingredients

  • 8 whole Medium-Sized Russet Potatoes
  • 2 pounds Gluten Free Bacon
  • 1 whole Large Onion
  • 2 sticks Butter
  • 12 ounces, weight Gluten Free Shredded Cheddar Cheese
  • Olive Oil, For Coating Potatoes

Preparation

Preheat oven to 450 F. Prick potatoes several times with a fork and rub them with olive oil. Set them on a baking tray. Bake potatoes for 45 minutes or until fork tender. Or you can boil them for 20 minutes or until fork tender, but not too soft. Set oven to 350 F when you remove potatoes from oven.

In a large skillet over medium heat, fry bacon until crisp then remove from grease to a paper towel lined plate. Dice the onion then cook it in the bacon grease until translucent. Drain onions and set aside.

Cut cooked potatoes into cubes or chunks.

In a 9X13″ casserole dish, layer potatoes, onions, chunks of butter, crumbled bacon and cheese to your liking. Top with a layer of cheese.

Bake at 350 F until cheddar is melted and bubbly.

Wondering if you have ever made this ahead of time? If so, how did you heat it up? Thinking covered in foil for about a half an hour, then uncovered for about 15 minutes more.

So simple! So good! Made these last night for my son’s birthday celebration. In lieu of baked potatoes, I thought these would be a great side to grilled steaks. And they were! What is nice about this recipe is you can adapt it any way you like to fit your family’s liking. Think of a loaded baked potato….that is this recipe. (Never had Pizza Express) If you like sour cream on your baked potato, an individual could easily add it to their serving after baking. Also, it would be easy to half this recipe for a smaller crowd.

I did make one adaptation. I only used one stick of butter and that worked for me. I thought the two pounds of bacon would be too much, but we love bacon
