This light and refreshing Mango Avocado Red Onion Salad is wonderful drizzled with cumin olive oil dressing! Vegan and sugar-free.
For the dressing:
In a small jar, mix olive oil, lemon juice, cumin and fresh coriander. Allow to sit while you make the salad.
For the salad:
Gently toss all ingredients together with as much of the dressing as you like in a medium size bowl. Arrange the salad in a pretty bowl or on a salad platter and serve.
Note: This salad is delicious with honey mustard chicken, lemon and herb chicken or fish fillets. Best enjoyed in the summertime when mangoes are in season!
