Description

This light and refreshing Mango Avocado Red Onion Salad is wonderful drizzled with cumin olive oil dressing! Vegan and sugar-free.

Ingredients

  • FOR THE DRESSING:
  • 6 Tablespoons Olive Oil
  • 2-½ Tablespoons Lemon Juice Or Apple Cider Vinegar
  • ½ teaspoons Cumin (more If You Like)
  • 12  Fresh Coriander (cilantro) Leaves, Finely Chopped (optional)
  • Salt To Taste
  • FOR THE SALALD:
  • 2  Large Mangoes, Peeled And Sliced
  • ½  Red Onion, Sliced Thinly
  • 12  Cherry Tomatoes, Sliced In Half
  • 1  Avocado, Peeled And Sliced Or Cubed

Preparation

For the dressing:
In a small jar, mix olive oil, lemon juice, cumin and fresh coriander. Allow to sit while you make the salad.

For the salad:
Gently toss all ingredients together with as much of the dressing as you like in a medium size bowl. Arrange the salad in a pretty bowl or on a salad platter and serve.

Note: This salad is delicious with honey mustard chicken, lemon and herb chicken or fish fillets. Best enjoyed in the summertime when mangoes are in season!
