Spaghetti squash with chicken and carmellized onions is a fantastic gluten-free alternative to pasta. It’s tasty and satisfying!
Preheat oven to 400ºF. Slice the spaghetti squash in half and remove the seeds.
Place squash cut side up on a baking sheet. Drizzle with olive oil and season with salt and pepper. Bake for 30 minutes or until fork-tender. Remove from oven.
Once spaghetti quash has cooled, shred meat of the squash with a fork and set aside.
Melt the butter in a medium skillet over medium high heat. Carmelize the onions in the skillet until lightly browned. Add chicken, veggie stock and spices to the onion mixture until heated through. Then add the spaghetti squash and mix to combine.
To serve, divide evenly and top with Parmesan cheese.
