Ah, red eye gravy. The caffeinated sauce that dresses up the brunch dishes of hungover folks. People have strong opinions on how it should be made—some say there is coffee in it, some say there is not. Whatever your opinion is, I think many of us can agree that it’s delicious.
Pour coffee into the large skillet and cook over medium-high heat for 1 minute, scraping skillet to loosen any browned bits. Add broth and sugar. Bring sauce to simmer and cook for 3–4 minutes, stirring occasionally, until thickened and reduced to about ¼ cup.
Add butter and whisk until emulsified, about an additional minute. Transfer to a small gravy boat.
