Chia seed pudding is one of my favorite things to make for breakfast or to have as a snack because it’s nutrient-dense, simple, unprocessed, and it only takes a few minutes to make.
Makes 1-2 servings.
Simply combine the chia seeds, almond milk, nut butter and cinnamon in a medium bowl. Mash the banana and stir it into the chia seed mixture.
Let the mixture sit for 15 minutes. Give it a good stir and then let sit for an additional 10 minutes (this is why it’s convenient to make the night before!). You’ll notice that the chia seeds will form a gel.
