Description

Individual baked oatmeal to please everyone in the family. You give everyone the choice of their own toppings!

Ingredients

  • 2 whole Eggs
  • 1 teaspoon Vanilla Extract
  • 2 cups Applesauce (unsweetened)
  • 1 whole Banana, Mashed
  • 1-½ teaspoon Stevia Powder
  • 5 cups Old Fashioned Quaker Rolled Oats
  • 1 teaspoon Salt
  • 3 teaspoons Baking Powder
  • ¼ cups Flaxseed Meal
  • 1 Tablespoon Ground Cinnamon
  • 2-¾ cups Milk (I Used 1%)
  • Optional Toppings, Such As Raisins, Fresh Or Frozen Blueberries, Walnuts, Chocolate Chips

Preparation

1. Preheat oven to 350 F.
2. Mix together the eggs, vanilla, applesauce, banana and Stevia in a large bowl.
3. Add in oats, salt, baking powder, flax and cinnamon and mix well.
4. Finally pour in the milk and mix to combine.
5. Spray a 12 and a 6 capacity muffin tin with cooking spray or use cupcake liners.
6. Pour mixture evenly into the muffin tin cups.
7. If using toppings add them onto the tops of muffins now. If using fresh or frozen fruit, drop it right into the batter.
8. Bake for 30 minutes or until a toothpick poked in the center of one comes out clean. Cool and enjoy now. Or freeze them in gallon-sized freezer bags.

*Additional Note: If you do not have Stevia, use one cup of honey. This will increase your nutrition info.
