Description

Classic fruitcake turned Paleo, this healthy gluten-free, grain-free and dairy-free Fruit Cake recipe is great with a cup of tea.

Ingredients

  • 1-½ cup Blanched Almond Flour
  • ½ teaspoons Celtic Sea Salt
  • ½ teaspoons Baking Soda
  • ½ cups Dates, Chopped
  • ½ cups Raisins
  • ½ cups Dried Cherries
  • 1 cup Walnuts, Chopped
  • 4 whole Eggs
  • 2 Tablespoons Coconut Oil
  • 1 Tablespoon Coconut Palm Sugar
  • 1 Tablespoon Vanilla Extract
  • 1 Tablespoon Orange Zest
  • 1 Tablespoon Lemon Zest

Preparation

In a large bowl, combine almond flour, salt and baking soda. Stir in dried fruit and nuts.

In a medium bowl, combine eggs, oil, coconut sugar, vanilla and citrus zest. Stir wet ingredients into dry.

Scoop batter into 2 greased mini loaf pans. Bake fruitcakes at 350°F for 20-30 minutes. Cool and serve.

I made this recently, subbing dried cranberries for the dried cherries and honey for the coconut palm sugar (just ordered some and will use that next time!) and it was deeee-licious! Really yummy and amazing!
