Grain free, gluten free chocolate cupcakes made with coconut oil for your Paleo celebrations.
Preheat oven to 350°F.
Pulse together dry ingredients (flour through baking soda) in a food processor. Add wet ingredients and pulse to combine.
Line a muffin pan (recipe makes 6) with paper liners and scoop ¼ cup of batter into each liner.
Bake at 350°F for 15-18 minutes. Then remove from the oven, cool and serve.
